A Touch of Nyonya Influence with Chef Debbie Teoh @ Chatz Brasserie, Park Royal KL

Celebrating the Parents’ Day in both May and June, Park Royal Kuala Lumpur is back with 
a touch of Nyonya Influence

Under such cosy ambiance, indulge yourself in the deliciously prepared Nyonya cuisine at Chatz Brasserie through lavish buffets, cooking demonstration and interactive cooking classes for fathers and kids.

With 15 years of experience in the fusion of Southern and Northen Nyonya styles cuisine, Chef Debbie Teoh presents you the true colors of Nyonya culinary arts! 

#1 Ayam Buah Keluak 

The first dish that is not to be missed is the authentic Nyonya Ayam Buah Keluak. The fruit is also known as black nuts, which require a whole process of treatment and fermentation for a few days, until the flavours are deeply revealed. A truly Nyonya signature dish! 

 #2 Terung with Sambal Udang Kering 

Cuts of brinjal are fried and topped with abundance of prawn sambal paste. The brinjal itself is quite bland but when matched with a pinch of sambal, this dish delights me!

 #3 The Sambal 

Made of herbs, garlic, shallot, bunga jantan and dried shrimps, it is rich and fiery hot. Not to forget, very scoop is full of aroma from the shrimps! 

#4 Ulam Platter 

A dish of perfect contrast unveils the fresh green leaves which bring the cooling effect with the bright red sambal paste. But don't ever have the beans, cucumber and mints alone without experiencing the true Nyonya sambal!

 #5 Nyonya Sambal 

I then sampled some authentic nyonya sambal, which complements well with the crunchy, crispy and minty raw vegetables. Despite of the flavours revealed, I find it rather too salty as a condiment. 

#6 Seafood Otak-otak 

Each piece of the spicy yellow custard is chunky with bits of seafood--- fish, prawn and squid. It definitely tastes good with the flaky texture, instead of the soft one we usually have.

#7 Gulai Tumis Ikan Pari 

#8 Lemak Nenas Ikan Sepat 

Every spoonful of the thick yellow kuah is rich in coconut milk flavours, with hints of sweet and sour pineapples. The thick, creamy curry is milder in taste as compared to the Ayam Buah Keluak.


 #9 Itik Tim 

I’m then served with a bowlful of savoury duck soup with salted mustard vegetables, which has a heat-reducing effect for the body. But I’d wish to try out the signature Ho Pio Soup by Chef Debbie, which I heard is beneficial for good health.

 #10 Nasi Ulam 

Another dish created from various spices is no other than the staple rice platter. Tickle your taste buds with the condiments in Nyonya Style! 

#11 Kuih Keladi Seri Muka 

This may look different because the bottom layer is made of yam in purplish tinge, instead of the usual white glutinous rice. 


It is a very old-fashioned Nyonya Kuih, which is topped with pandan layer and most excitingly, the bottom layer of powdery yam definitely leaves an unforgettable experience here!

#12 Pulut Panggang 

Unwrap the leaf and you find the glutinous rice stuffed with shrimp fillings which comes in blue tinges from the clitoris flower. Each bite of the rice is sticky and aromatic; One is certainly not enough! 

#13 Lemon Grass Cooler 
 Wash away the spiciness with glasses of refreshing drinks. 

#14 Assorted Fruit Juices 


 #15 Nyonya Dumpling 

Upon leaving, I get to sample some glutinous rice dumpling wrapped in bamboo leaves. The rice is added with natural blue color using clitoris flower, and stuffed with delicious sweet filling. I love the chewy texture, especially when it is steamed hot. What a perfect endnote of the meal!

Verdict: 
1. Here’re just some dishes from the buffet line, I would revisit to try out the rest from our master chef, Chef Debbie Teoh!
2. The food, in terms of quality, freshness and authenticity is pretty good, thumbs up to the taste and flavours too!
3. Among all, the Ayam Buah Keluak, kuih and dumpling are my favourite. According to the chef, some purposely pay a visit here just for her famous Ayam Buah Keluak!

    how the buah keluak taste ? like a nut?
    then somemore seafood otak otak .. hmmmm.. i never tried before...

  9. The taste of the pudding is in the eating - can't tell from just looking at the photos.

    I wouldn't say the serimuka looks nice - the green layer does not look lemak enough...and I would prefer the traditional pulut, not yam...and the zhang, nothing like good ol' pork! I guess in hotel, they are halal ones? And usually in hotel, they would tone down to suit the general taste of the diners - not spicy... I love food extra spicy.

    And the price!!!! *faints!!!
