Fusion Western Dining at Shook! @ Feast Village, Starhill Gallery

Dining at Starhill Gallery can be an exquisite experience, especially at its Feast Village's most popular restaurant, Shook!. Since its opening in 2005, Shook! has been continuously captivating guests with its creative fusion of Chinese, Japanese, South-East Asian and contemporary Western cuisine.

Shook!’s intimate ambiance of sparkling wine glasses, cascading water features, unique kasbah seating areas and low key lighting has heightened our dining experience during the evening. Moreover, there are extravagant display counters where guests can watch the chefs in action in all four show kitchens.

The menu I sample at Shook! is exclusively curated by Executive Chef Richard Sawyer for "A Journey Through Time", Asia’s premier watch and jewellery showcase featuring over 125 brands from around the world. His gastronomic delicacies will be made available from 20th to 27th November 2015.

APPETIZERS
Seared Maine Sea Scallop
Saffron Infused Cauliflower Mousseline, Watercress, Hazelnut Vinaigrette

First to arrive is the light seafood starter, pan-seared into golden perfection with a touch of butter. The sea scallop beautifully retains its rich oceanic taste within the succulent white flesh, and is an excellent pick-me-up before tucking into the main courses.

Beetroot Cured Salmon
Dill Crème Fraiche, Toasted Fennel Seeds, Watercress, Lemon Zest

The next appetizer is beautifully presented in vibrant hues. The beetroot-tinged salt-cure salmon is very well-executed with an exciting earthiness, complemented perfectly with the herbed flavour of dill and tangy creme fraiche. It's my personal favourite of the evening! 

  
MAIN COURSES
Roasted Australian Lamb Loin
Muesli and Mint Crust, Honey, Rosemary, Edamame Puree, Baked Stuffed Tomato, Balsamic Fig Glaze

Surprise comes one after another. We are then treated with a sous vide Australian strip loin coated with muesli and mint crust, served on a bed of vibrant green edamame puree. This French cooking method retains the moisture and flavour of the lamb, hence every bite yields an exquisite crunch and tenderness. 

Another noteworthy component of the dish is the baked tomato stuffed with cream cheese, sitting on a "ring" of Parmesan cheese. The light, cheesy flavour further accentuates the savoury taste of the overall dish. Simply perfect! 

Baked Fillet of Cod
Herb Risotto, Green Asparagus, Australian Mussels, Saffron Cream

The menu doesn't lack choice of mains; You can opt for Australian beef tenderloin, short rib or cod fish if lamb is not your choice. Our thick-cut baked cod is a classic, but certainly one of our favourites when it is coupled with rich herb risotto and thick saffron cream.


Every spoonful of the risotto explodes with strong herb flavours, perfectly cutting through
the oceanic sweetness of the fish. How can I not smitten by the heavenly creation?

DESSERT
Red Velvet
Raspberry Mousse, Fresh Berries, Light Meringue


Putting a sweet endnote to our memorable dinner, the dessert of the evening has indeed seduced me with multi-dimensional layers of texture and taste. Red velvet is an ensemble of tangy raspberry mousse, fresh berries compote and cake, accompanied with a boastful of sweet sensation from the light meringue shell. Perfect for the sweet tooth.
