Welcome to AN Omakase!
I am elated to see such exquisite design of the interior, featuring black stone, moon-like lighting on the ceiling and black stone. The sleek and mysterious design definitely elevates the dining experience here.
Diners have a choice of several Omakase menus at the 15-seater counter helmed by veteran Singaporean Chef Shim:
❤ 12-course Tsuyu $88 (only for lunch)
❤ 15-course Tatsumaki $128
❤ 17-course Aozora $188
- Available daily with 5 rounds of serving (12.00noon, 1.30pm, 6.00pm, 7.30pm, 9.00pm)
To perfect the intimate dining experience, AN Omakase uses only the premium grade ingredients
from around the world, and strives to bring the ocean’s freshness directly to the table.
Presentation wise, it is not lacking at all. The dining experience here is indeed full of surprises.
Now let's begin our Omakase set lunch which comprises of:
❤ Appetiser (trio in a platter)
❤ Sushi (7 kinds)
❤ Chawan mushi
❤ Miso soup
❤ Dessert
This is followed by sushi of 7 kinds. I love the usage of vinegar in marinating the sushi rice,
making it more moist than the usual pearl white sushi rice.
Kampachi | Torched Golden Eye Snapper sprinkled with Snowflake Salt
Medium-fat Tuna Belly with Yuzu Pepper
Seared Hotate with Yuzu Shaving
To be honest, I am pleasantly surprised by the freshness of seafood here, especially the sweet juicy scallop. Lightly seared, it exudes a beautiful touch of smokiness while retaining the naturally sweet oceanic goodness.
Amaebi | Sweet Shrimp, Foie Gras
The amaebi sushi is something unique to me. The torched foie gras topping tastes like a piece of browned butter that melts in the mouth with the sweet shrimp. The combination tastes extra smooth, and moist on the palate. Brilliant!
Toro topped with Golden Caviar
Uni Handroll - my personal favourite too!
Miso soup with fish noodles
For the soup, it is a nice surprise to find some springy fish noodles in the rich miso soup. The noodles are made purely from fish paste, allowing it to have a fresh springy texture without feeling heavy on the palate.
Dessert | Black Sesame Monaka
Lastly, the sesame ice cream in rice cracker is a pretty light dessert and completes the meal very well.
Verdict:
AN Omakase is a perfect spot for lunch and dinner dates with your loved ones, without burning a hole in the pocket. I truly enjoy the freshness of ingredients used here, coupled with the amazing presentation of food by the chefs.
